Okra Soup

  • 1/2 onion diced
  • 1 red pepper diced
  • 1 teaspoon fresh garlic minced
  • 2 tablespoons fresh parsley
  • 1/2 cup vegetable broth
  • 2 cups tomato juice (low sodium)
  • 2 cups vegetable broth
  • 1 tablespoon apple juice concentrate
  • 2 tablespoons soy sauce (low-sodium)
  • 3/4 pound okra
  • 1/2 teaspoon lemon juice


  • Saute onion , red pepper, garlic and parsley in vegetable broth for 5 minutes.
  • Add tomato juice, vegetable broth, apple juice concentrate and soy sauce.
  • Bring to a boil.
  • Add okra and lemon juice and allow to simmer at low temperature for 40 minutes.
