Poached Halibut in a Vegetable Broth

  • 1 pound halibut cut into 4-oz portions
  • 2 cups snow peas julienne
  • 8 ounces bean sprouts
  • 2 red pepper de-seeded & julienne
  • 1 red onion peeled & julienne
  • 1 cup carrot julienne
  • 4 tablespoon garlic sliced
  • 1 tablespoon ginger minced
  • 1 tablespoon lemon zest
  • 3 cups vegetable stock
  • 1 cup sherry
  • 3 tablespoons cilantro chopped


  • In a Large skillet add all ingredients except cilantro.
  • Cook covered over low heat for 6 minutes.
  • Uncover add cilantro and cook for 2 minutes more.
  • Serve over black rice
