Materials

Quinoa Salad

  • 1.5 cup red quinoa cooked
  • 1.5 cup white quinoa can substitute millet
  • 1 cup cucumber diced
  • 1 cup carrots grated
  • 1 cup green onions minced
  • 1 cup green bell peppers minced
  • 1 cup red bell peppers minced
  • 1 cup yellow grape tomatoes halved
  • 1 cup red grape tomatoes halved
  • 1/2 cup Italian parsley minced
  • 1/4 cup cup dill minced
  • 1/4 cup basil minced

Zesty Italian Dressing

  • 1/2 cup white wine vinegar
  • 1/4 cup lemon juice
  • 1/2 cup apple juice concentrate
  • 1 tsp granulated onion
  • 1 tsp granulated garlic
  • 1 tsp dry basil
  • 1 tsp dry parsley
  • 1.5 tsp dry oregano

Instructions

Quinoa Salad

  • Mix all ingredients and refrigerate.

Zesty Italian Dressing

  • Combine all ingredients in blender and run until smooth.

Notes

Add xanthan gum to thicken the dressing as necessary.
