Red Beans Con Grio

Materials

  • 2 cups beans (kindney or pinto) cooked
  • 2 cups brown rice uncooked
  • 4 cups vegetable stock or de-fatted chicken stock
  • 1/4 cup red pepper chopped
  • 1/4 cup green pepper chopped
  • 1/4 cup tomato diced
  • 1 teaspoon garlic minced
  • 1/4 cup enrico's mild salsa
  • 1 tablespoon parsley or cilantro chopped
  • 1 teaspoon soy sauce (lite)
  • 1 vegetable oil spray (fat free)

Instructions

  • Combine rice, stock and beans in rice cooker set on medium.
  • Lightly mist skillet and saute onion, peppers and tomato until tender.
  • Add garlic and salsa, reduce temperature and simmer for 5 minutes.
  • Add to rice cooker.
  • When the bell rings on the rice cooker, add soy sauce and parsley.
  • Serve hot
