Rutabaga Soup
Ingredients
- 12 large rutabaga peeled & large dice
 - 6 leeks white only chopped
 - 2 cups garlic
 - 1 cup shallots
 - 1 head fennel chopped
 - 1 bunch thyme picked & chopped
 - 10 potato peeled & diced
 - 3 gallons water
 - 1 teaspoon black peppercorns ground
 - 1 teaspoon salt
 - 1/2 gallon soy milk
 - 1 cup milk (evaporated fat-free)
 
Instructions
- Bring all ingredients to a boil except soy milk & milk.
 - Simmer for 1 hour.
 - Puree and add the two milks.
 - Serve Hot
