Stuffed Jumbo Artichoke

  • 12 jumbo artichoke trimmed & scooped
  • 1 cup garlic roasted
  • 1 cup onion caramelized
  • 1 cup pita bread crumbs (whole-wheat)
  • 1 cup marinara sauce
  • 1 cup white beans cooked
  • &fr bunch basil picked


  • Steam artichoke with lemon juice brushed to prevent discoloration.
  • Cool immediately.
  • In Cuisenart puree roasted garlic, caramelized onion, pita, half cup marinara, white beans, basil.
  • Stuff the cooled artichokes with the stuffing.
  • Bake at 350- degree oven until hot to serve.
