Stuffed Jumbo Artichoke

- 12 jumbo artichoke trimmed & scooped
- 1 cup garlic roasted
- 1 cup onion caramelized
- 1 cup pita bread crumbs (whole-wheat)
- 1 cup marinara sauce
- 1 cup white beans cooked
- &fr bunch basil picked
- Steam artichoke with lemon juice brushed to prevent discoloration.
- Cool immediately.
- In Cuisenart puree roasted garlic, caramelized onion, pita, half cup marinara, white beans, basil.
- Stuff the cooled artichokes with the stuffing.
- Bake at 350- degree oven until hot to serve.
