  • 1 pound red beets peeled and cooked
  • 1 pound carrots peeled, diced and steamed
  • 1 cup mango ripe, peeled and diced
  • 1/2 cup blueberries
  • 4 cup mixed greens lettuce
  • 1/4 cup Pritikin Outrageous Asian Salad Dressing or Pritikin Tuscan Sunshine Italian Salad Dressing


  • On a bed of mixed greens arrange equal amounts of beets, carrot, blueberries and mango.
  • Drizzle with Pritikin Outrageous Asian or Pritikin Tuscan Sunshine Italian Salad Dressing.
