Broccoli Bisque

Chef Anthony's creamy Broccoli Bisque is a yummy way to add an extra serving of vegetables to your day.

Yield: 12 one-cup portions


  • 3 pounds broccoli
  • 2 cups onion chopped
  • 3 tablespoon garlic chopped
  • 1 pound potatoes peeled and chopped
  • 1 quart vegetable stock
  • 3 tablespoon Pritikin® All-Purpose Seasoning*
  • 2 teaspoon soy sauce, low sodium
  • 1/4 cup white vinegar
  • 1 cup soy milk powder or skim milk
  • 1/4 cup basil chopped
  • 3 tablespoons fresh dill chopped


  • In a large stock pot sauté broccoli, onion, garlic and potatoes for 4 minutes
  • Add vegetable stock and Pritikin seasoning and cook for about 30 minutes over medium flame
  • Add all other ingredients and blend
  • Simmer 15 minutes longer then serve.
