Broccoli Quinoa Patties

  • 2 cup cooked red quinoa
  • 8 cup broccoli florets steam al dente
  • 2 cup carrot, dice fine steam al dente
  • 3 tb grated parmesan
  • 1 cup egg beaters
  • 1 cup panko bread crumbs
  • 4 tb fresh parsley chopped
  • 2 tb fresh basil chopped
  • 2 tb fresh dill chopped
  • 2 tb roasted garlic
  • 4 tb roasted shallots
  • 2 tb all purpose seasoning
  • 1 tb lemon pepper salt free

Creamy Lemon Basil Sauce

  • 1/2 cup Italian parsley
  • 1/2 cup basil
  • 4 u lemon zest and juice
  • 1 tb dijon
  • 1 tsp minced garlic
  • 1/2 cup apple juice concentrate
  • 2 tb cider vinegar
  • 2 tb green grotto
  • 1 tb Mr Dash seasoning ground
  • 1.5 cup fat free sour cream

Instructions

Broccoli Quinoa Patties

  • Pulse broccoli in food procedure for 20-30 seconds
  • Puree roasted shallot and garlic with egg beaters
  • Combine all ingredients in bowl and mix thoroughly
  • Spray sheet pan with Pam and portion mix with ice cream scoop for fast, consistent sizes
  • Press the balls down to form a patty/burger shape
  • Bake at 375 F for 10 minutes, flip them and cook for 10 more minutes

  • Blend all ingredients until smooth
