Instructions
  1. Preheat oven to 500 degrees F.
  2. In a large mixing bowl, soak bread in soy milk for about 10 minutes. Add pumpkin, Splenda, raisins, and spices (through vanilla extract). Stir to combine.
  3. Fold in egg whites. Then gently add blueberries.
  4. Pour mixture in a 13 x 9" baking dish or 12 individual muffin cups. Bake at 500 degrees for 10 minutes, then reduce temperature to 350 degrees and bake for another 15 minutes.
  5. Cool, then serve.
