Crunchy Thai Chickpea Salad
Ingredients
Crunchy Thai Chickpea Salad
- 12 cup romaine lettuce
- 2 cup crispy cooked chickpeas
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 cup thinly sliced red bell peppers
- 1 cup cucumber, thinly sliced
- 1 cup finely chopped cashews, unsalted garnish
- 1 cup curry tahini dressing
- chopped fresh cilantro garnish
- lime, cut into wedges garnish
Curry Tahini Dressing
- 1/2 cup tahini
- 3 tb lemon juice
- 1 cup 100% pure apple juice
- 1 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp paprika
- 1 tsp garlic minced, fine
- 1 tb water – adjust for desired consistency
Instructions
Crunchy Thai Chickpea Salad
- Mix all vegetables together
- Layer on top of romaine lettuce
- Sprinkle a generous amount of chick peas
- Garnish the top with a small amount of chopped cashews
- Sprinkle cilantro and use lime wedge to garnish
Curry Tahini Dressing
- If your tahini has separated, stir it well until it's smooth and homogeneous
- In a blender, combine all ingredients and mix well
