Grilled Fish with Baby Kale

Materials

  • 5 large swai fillets or other mild white fish
  • 1 large package kale (baby)
  • 2 cloves garlic minced
  • 2 limes zest and juiced
  • 1 handful cilantro (fresh leaves)
  • pepper to taste
  • cooking spray oil non-stick
  • rice (whole grain) cooked

Instructions

  • Preheat your grill. Lay out 5 large pieces of aluminum foil and lightly spray with non-stick cooking spray. Pile on each foil in order: large stack raw baby kale, 1 piece of fish, lightly pepper, sprinkle on a bit of garlic, the lime zest, a small squeeze of lime juice and a sprinkling of cilantro.
  • Repeat for all 5 foils.
  • Wrap them up tight and place them on your grill.
  • Grill approximately 15 minutes, or until the fish is firm, white and flaky. Serve over whole grain rice!
