Pan Seared Salmon in Roasted Red Pepper Sauce

Materials

Pan Seared Salmon

  • 4 4 ounces salmon (wild)
  • 1 tablespoon Pritikin Fish Seasoning

Roasted Red Pepper Sauce

  • 2 cups red pepper fire roasted
  • 1/2 teaspoon garlic chopped
  • 1/2 onion diced
  • 1/4 cup white balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon pepper fresh ground
  • 1/2 tablespoon oregano (dried)

Instructions

Pan Seared Salmon

  • Season fish with Pritikin Fish Seasoning on both sides
  • In a medium hot skillet sear fish on each side for 3 minutes
  • Remove from the flame and rest in skillet for 2 minutes then serve. (Salmon should be slightly pink on the inside)

Roasted Red Pepper Sauce

  • Saute onion and garlic; add roasted red pepper and oregano and sauté for an additional 5 minutes
  • Put all ingredients in a blender and blend for 2 minutes. Poor over salmon and serve
