  1. TOFU
  2. Toast and grind cloves & cumin.
  3. Mix well with remainder of ingredients, except tofu, in Cuisenart.
  4. Marinate with tofu for 24 hours.
  5. Grill tofu and serve with cucumber raita
  6. RAITA
  7. Line a colander with cheesecloth and put in yogurt.
  8. Cover and refrigerate overnight.
  9. Discard liquid and mix all ingredients well with a whisk.
  10. Serve cold.
