Zucchini & Garbanzo Salad

Materials

  • 2 zucchini julienned (cut into long thin strips)
  • 2 yellow squash julienned
  • 1 red onion julienned
  • 1 red pepper, julienned
  • 1 carrot peeled and julienned
  • 4 lemons juiced
  • 1/2 bunch dill chopped
  • 1 tablespoon coriander
  • 1 tablespoon paprika
  • 1/4 teaspoon black peppercons ground
  • 1/2 cup water
  • 6 ounces garbanzo beans cooked and cooled

Instructions

  • Mix zucchini, squash, onion, lemon juice, dill, coriander, paprika, pepper, and water together.
  • Let marinate for 1 hour.
  • Sprinkle each salad with one-half ounce of beans.
