Lemon Braised Sea Bass Salad

You can make this salad in about 10 minutes. Chef Vince is joined by Kara, Pritikin's Registered Dietitian, and they talk about this easy recipe and why the ingredients used are necessary for a healthy diet. Take the tips from this video and make a salad using ingredients you prefer.

Materials

Sea Bass

  • 4 oz Sea Bass
  • 1 tsp Pritikin All Purpose Seasoning
  • 1 tsp Mrs Dash ground
  • 2 lemon juice and zested
  • 3 tb white wine

Fennel & Mango Salad

  • 1 cup grapefruit
  • 1 cup oranges
  • 1 cup fennel julienne
  • 1 cup mango julienne
  • 1 cup red onion julienne
  • 1 cup red pepper julienne
  • 1 cup green pepper julienne
  • 1 cup carrot julienne
  • 1 cup jicama julienne
  • 1 lb mixed green

Citrus Herb Dressing

  • 1/4 bu cilantro chopped
  • 1/2 bu parsley chopped
  • 1 tb garlic minced
  • 1 tb Dijon mustard
  • 1/2 cup orange juice concentrate
  • 1/2 cup apple cider vinegar
  • 1/2 cup apple juice concentrate
  • small dash of xanthan gum to thicken no more than 1/8 tsp

Instructions

Sea Bass

  • Mix dry seasonings together and coat Sea Bass
  • In a medium hot skillet sear one side until brown
  • Combine the lemon juice, zest and wine in a bowl, then pour over fish and cover
  • Cook for two minutes, you do not need to flip the fish

Fennel & Mango Salad

  • Combine all vegetables in a bowl
  • Add citrus herb dressing to vegetables and let ir marinate for 5 minutes
  • Serve on a bed of mixed greens

Citrus Herb Dressing

  • Combine all ingredients in blender
  • Blend for 60 seconds
  • Adjust desired thickness with the xanthan gum

Notes

  • Try using another citrus. Also try other proteins like sea bass, chicken and even tofu.
